Origin and construction of 真
- 会意。元は「眞」で「匕」（さじ）+「鼎」で容器にものを満たすこと（藤堂）。「匕」（死体）+「県」（首を逆さづりにしたもの）で行き倒れの死体、これを埋葬し霊力を得ることから「まこと」の意を得た（白川）。

why is the onyomi written in hiragana? And what does the dash behind ま mean?

This site uses the EDICT and KANJIDIC dictionary files. These files are the property of the Electronic Dictionary Research and Development Group, and are used in conformance with the Group's licence.
The onyomi are the readings that came from China, and the kunyomi are readings that originated in Japan. Since katakana is [usually] used for foreign or borrowed words, the onyomi is written in Katakana.
I think that the hyphen after ま means that 真 is usually pronounced "ま" when it preceeds another (I assume kanji) characher. Someone please correct me if I'm wrong about this.
