Restaurant Etiquette for "Hoshii"?

I heard that, when ordering food, generally speaking it's normal to go with "blah blah blah kudasai", which makes sense, since it's a request.

Last year though I went to my first omakase at a local sushi bar in the US. Most of what I said was "blah blah blah kudasai". Just constantly. I must've said it like 50 times. That, and dozens of "sore wa oishii desu" and "arigatou gozaimasu" I felt like a moron. They were super nice and polite, and i don't think they cared, but still. My lack of fluency in that situation still haunts me. I mean, you spend hours studying and you're eager to use what you've learned. Then panic causes you to forget a lot, and sometimes there's not much overlap between what you know and what you need to say.

 

Today I learned about "blah blah blah ga hoshii desu". A light bulb went off!! "Maybe this is the flourish of variety that would help me feel more confident!

..but should I use it? ...and if so, when?

(in the US, the only people i know that go around saying, "i want this" and "I want that" are spoiled toddlers....so "hoshii" definately seems like the type of verb that should be used carefully...or maybe I'm wrong, i dunno)

 

One thought I had:

Maybe if I'm in a situation where i have an empty plate in front of me and feel like they've forgotten about me--for an eternity, maybe i could say something like, "Ima ga hoshii desu. Onegaishimasu!"

Would that sound natural....or would I come off as sounding like some kind of dictator?

i have the same question; i'd just go to Japanese vlogs and see how they use the phrases
