Is this correct? 日 あした まえ に What i want to say is "day after tomorrow"

There is a special word for the "day after tomorrow".  ( あさって )

Yes, Japanese has specials words for things like this. asatte is the day after tomorrow, ototoi is the other day, itotoshi is the year before last, rainen is next year, sarainen is the year after next year, saraishuu is the week after next....and so on

Right, I agree that in Japanese the day after tomorrow would be あさって, but what if you're writing its meaning or defininng it using Japanese syllabry, how would you write it?

Anothe one 月用日 に ひこうき で にほん へ いきます。 Getsuyoubi ni hikouki de nihon he ikimasu

The "you" in "youbi"(day) is　曜 instead of 用。So, it would be 月曜日に飛行機で日本へ行きます。
